FIRE releases are now automated with release-please (fiberseq/FIRE#63), so the install docs now point users at the latest tagged release instead of main, and include an update recipe.

Note: worth merging after fiberseq/FIRE#62 lands and v0.2.0 is tagged — the current latest tag (v0.1.0) predates several fixes on main.

FIRE releases are now automated (release-please), so tags are the
supported install points rather than whatever is on main.
